Pumpkin Fingers

INGREDIENTS:
  • 1 smallish pumpkin
  • 1 egg
  • breadcrumbs
  • fresh herbs to taste (such as basil, tarragon, dill, chervil, lovage and/or parsley)
  • cooking fat for frying
  • salt


    DIRECTIONS:
    Peel, deseed, wash and cut the pumpkin into pieces as long and thick as fingers.
    Boil briefly in salted water and drain well before rolling the fingers in fresh herbs.
    Then dab them into the well beaten egg and coat in breadcrumbs before frying them to a golden brown colour.
