Pumpkin Seed Ring Cake

INGREDIENTS:
  • 4 eggs
  • 100 ml water
  • 100 ml pumpkin seed oil
  • 100 g granulated sugar
  • 150 g icing sugar
  • 250 g flour
  • 8 g vanilla sugar
  • pumpkin seeds to taste
  • 4 g baking powder
  • fat for the cake form


    DIRECTIONS:
    Grease the form, sprinkle with flour and line with pumpkin seed halves.
    Mix egg yolks, water, icing sugar, vanilla sugar and pumpkin seed oil until foamy.
    Whisk egg whites and granulated sugar until reasonably stiff.
    Add a third of the egg white and flour and mix well before carefully folding in the rest of the beaten egg whites.
    Bake for about one hour at 160 °C.
    Either sprinkle generously with sugar while still hot or apply an icing when cold.
