Pumpkin Pudding

INGREDIENTS:
  • 2 eggs
  • 100 g sugar
  • 250 g pureed pumpkin
  • 1/4 litre single cream
  • a little brandy (or rum)
  • a pinch of salt
  • nutmeg
  • cinnamon


    DIRECTIONS:
    Add the sugar, salt and spices to the eggs and beat until foamy.
    Fold the pureed pumpkin, single cream and brandy (or rum) in the mixture.
    Transfer into a greased form sprinkled with breadcrumbs and bake bain-marie for an hour.
    Serve hot or cold with single cream.
