Kapfensteiner Pumpkin Seed Gateau

INGREDIENTS:
  • 6 egg yolks
  • 200 g icing sugar
  • 50 g breadcrumbs
  • 1/16 litre rum
  • 100 g ground hazelnuts
  • 200 g ground pumpkin seeds
  • 50 g wheat flour
  • 200 g grated apples
  • 6 egg whites
  • 100 g granulated sugar


    DIRECTIONS:
    Mix together the egg yolks and icing sugar until foamy.
    Soak the breadcrumbs with rum and add to the egg yolks together with the hazelnuts, pumpkin seeds and apples.
    Add the sugar to the egg whites and beat stiff.
    Fold the egg whites and the flour carefully in the mixture.
    Bake at 180 °C (at first, then reduce to 160 °C) for approximately one hour.
    Sprinkle with icing sugar.
