Garlic & Pumpkin Seed Sauce

INGREDIENTS:
  • 1 clove of garlic
  • a little single cream and crème fraîche
  • 1/8 litre chicken stock
  • cornflour
  • pumpkin seed oil


    DIRECTIONS:
    Heat just a drop of pumpkin seed oil and sweat the crushed garlic in it.
    Pour in the chicken stock.

    Reduce considerably before thickening it with the cream and crème fraîche. Stir in 1-2 generous pinches of cornflour. Finally add 2 tablespoons pumpkin seed oil.

    Mix with a little gravy and serve with a saddle of lamb, rare fillet steak or lamb cutlets.
