Pumpkin Gnocchi

INGREDIENTS:
  • 1/2 kg peeled and deseeded pumpkin
  • 250 g flour
  • 1-2 eggs
  • 3 tpsp oil
  • 1 tsp salt
  • a little butter


    DIRECTIONS:
    Place the pumpkin in the heated oven without water.
    When soft, puree and add flour, eggs, oil and salt and mix into a dough.
    Form the gnocchi and cook in salted water until they start to float.
    Strain – hold under the cold tap – swirl in hot butter and serve.
