Beef Salad with Pumpkin Seed Oil

INGREDIENTS:
  • 24 to 30 thin slices boiled beef
  • 1/2 yellow onion
  • 1 yellow pepper
  • 1 to 2 tomatoes
  • 1 to 2 boiled eggs
  • 1/2 l plate or herb vinegar
  • 1/16 l pumpkin seed oil
  • salt
  • pepper

    In addition, for uncooked meat
  • 5 l water
  • roots
  • 3 carrots
  • 1/2 celery
  • 1/2 leek
  • 5 peppermints
  • 2 bay leaves
  • 1 onion, once cut transversely and on the cut surfaces saute


    DIRECTIONS:
    If the beef is not yet cooked, put the whole piece of meat in circa 5 l of boiling water. Add the roots, carrots, cerlery, leek, peppermint, bay leaves and fried onions, let it cook for circa 2 hours. Remove the meat and let it cool because you only can cut it into slices, when it‘s cold.

    Cut the meat, the yellow pepper and the half onion into slices. Marinate it with salt, pepper, 1/16 l pumpkin seed oil and 1/2 l vinegar. Decorate with 1 or 2 tomato and egg slices and serve.
