Pumpkin Escalope

INGREDIENTS:
  • 1 pumpkin (about 1 kg)
  • salt
  • pepper
  • nutmeg
  • 3 eggs
  • 5 tbsp chopped herbs (such as dill, parsley, chives and/or leek)
  • a little flour
  • cooking fat


    DIRECTIONS:
    Peel and deseed the pumpkin and cut into 1/2 cm thick slices.
    Salt on both sides and leave to seep for 20 minutes.
    Dry with kitchen roll and season with pepper and nutmeg.
    Mix together three eggs and the finely chopped herbs.
    Turn the pumpkin slices first in flour and then in the egg mixture and fry in medium hot fat until golden brown.

    Tip: Serve with a thick tomato sauce.
