Sunflower Seed Spread with Pumpkin Seed Oil

Ingredients

Makes 5 Cups
2 1/2 cups raw, unsalted sunflower seeds
1/4 cup sesame seeds
2 tbsp Pumpkin Seed Oil
2 tbsp roasted sesame oil
2 shallots, peeled and cut into chunks
454 g silken tofu, unflavored
1/4 cup light soy sauce
1/2 tsp sea salt
pinch of freshly ground black pepper
juice of one lemon

Instructions

Put all ingredients in a food processor and blend until completely smooth. Adjust consistency of this spread by adding small amounts of water.
Store unused portions in a glass jar with a tight fitting lid in the refrigerator.
