Styrian Lentil Salad

Ingredients

150 g lentils
1/2 onion
1/2 carrot
30 g bacon rind
1 bayleaf
60 ml Pumpkin Seed Oil
60 ml good wine vinegar
30 g shallots
salt
pepper

Instructions

Wash the lentils and cook in salted water with the onion, carrot, bacon rind and bayleaf.
Drain, transfer the lentils onto a kitchen cloth and remove the vegetables.
Leave to cool.
Mix the pumpkin seed oil and wine vinegar and add the lentils and finely chopped shallots.
Season to taste with salt and pepper.
